1 chopped onion
1 stick of celery, chopped
2 cloves of garlic, finely chopped
1 can of fine tomato
2 punnets of ZZ2 Romanitas
2 cups of peeled dates (soak them overnight in water if they are not soft)
3 tablespoons balsamic vinegar
½ teaspoon of smoked paprika
red pepper to taste
large pinch of fine cinnamon
salt and pepper to taste
Fry the onions and celery in olive oil until soft.
Add the garlic and fry for another minute or two. Stir constantly to prevent the garlic from burning.
Add all the other ingredients, bring to a boil, then cook on low heat until the dates and tomatoes fall apart. Stir every now and then to keep it from burning.
Process in a food processor to a thick sauce. Taste for flavour.
Store in clean containers in the fridge for a week or two.
