½ cup bulgur wheat
1 cup water
1 tablespoon mint
1 tablespoon finely chopped red onion
1 tablespoon finely chopped cucumbers
½ cup ZZ2 medley mix tomatoes, cut in half
1 tablespoon fresh lemon juice
Salt and pepper
Add half a cup of bulgur wheat to one cup of water in a saucepan, and let simmer for 10 minutes
Once cooked, drain excess water if any, and transfer to a bowl to cool
Once cooled add all the other ingredients to the bowl, season with salt and pepper and mix till well combined and serve.
