Onion rings are a crowd pleaser and with this recipe, four large ZZ2 onions will take you a long way. Add a dip of blue cheese and you have a great snack or as side dish for fish or steak alike!

Beer Batter:
2 c (500 ml) cake flour
½ c (125 ml) corn flour
1 tsp (5 ml) salt
1 T (15 ml) baking powder
500 ml ice cold beer or soda water
4 large ZZ2 Onions, thickly sliced and broken into rings
½ c (125 ml) seasoned flour
Blue cheese dip:
100 g mild blue cheese
½ c (125 ml) sour cream
¼ c (60 ml) creamy mayonnaise
Vegetable oil for deep frying
Paper towel to absorb excess oil
For the batter, sift the dry ingredients together into a large bowl.
Add the beer and whisk vigorously until smooth with no lumps. Allow to stand a for 30 minutes.
Coat the onions rings well in seasoned flour.
Dip: Place the cheese, sour cream and mayo into a food processor and blend until smooth. Spoon into serving bowls and sprinkle with extra blue cheese if you have any leftover.
Heat enough oil for deep frying.
Generously dip a few onion rings at a time in the batter and fry in batches. They are ready when the batter puffs up, turns a light golden colour and super crispy!
Place onto a rack covered with paper towel to absorb excess oil. Season the onion rings with salt and pepper.
Serve immediately with blue cheese dip.
Enjoy with a variety of crowd pleasing snacks such as biltong, chicken wings, mini meatballs and vegetable crudités.
